Granite al limone, al caffè, al cioccolato e alla fragola di Giovanna Montes Costa - Sicilian granitas

Granita al limone senza gelatiera

Ingredienti: 
1 litro di succo di limone
1 kg di zucchero
2 litri di acqua

Procedimento:
Mettete l'acqua e lo zucchero in una ciotola di acciaio. Mescolate bene per fare sciogliere tutto lo zucchero. Aggiungete il succo di limone. Chiudete la ciotola con il coperchio e traferite in freezer fino al congelamento. Se non doveste avere a dispozione una ciotola munita di coperchio, potete utilizzare una pentola in acciaio. 
Una volta che il composto si è congelato basterà lavorarlo con un frullatore ad immersione. 
In alternativa, con un coltello tagliate il composto a pezzettoni e trasferitelo in un robot da cucina. Lavoratelo fino a renderlo spumoso.

Granità al caffe senza gelatiera

Ingredienti:
1/2 litro di acqua 
250 ml di caffè espresso
100 g di zucchero
panna montata

Procedimento:
In un pentolino portate ad ebollizione l'acqua con lo zucchero mescolando con cura per fare sciogliere lo zucchero completamente. Fuori dal fuoco aggiungete il caffe. Fate intiepidire. Trasferite in una ciotola in acciaio munita di coperchio e passate il composto in congelatore. Quando si è congelato ( di solito dopo 3 ore) lavoratelo con un frullatore ad immersione o tagliatelo a pezzi e passatelo al frullatore fino a renderlo fine e spumoso. Servite con panna montata a piacere.

Granita al cioccolato senza gelatiera

Ingredienti:
500 ml di acqua
180 g di cioccolato fondente al 75%
200 g di zucchero
80 g di cacao amaro

Procedimento:

In un pentolino mettere l'acqua e sciogliervi lo zucchero e il cacao. Mettere sul fuoco e portare a bollore. Togliere dal fuoco e aggiungere il cioccolato a pezzettoni e combinare fino a scioglierlo del tutto. Trasferire il composto in una ciotola in acciaio munita di coperchio. Lasciare intiepidire. Chiudere con il coperchio e passare in freezer. Quando il composto si è congelato basterà lavorarlo con un frullatore ad immersione o tagliarlo a pezzi e passarlo ad un robot da cucina fino a renderlo fine e spumoso. Accompagnare a piacere con panna montata zuccherata.



Granita alla fragola senza gelatiera

Ingredienti:
500 g di fragole
150 g di zucchero +4 cucchiai
300 ml di acqua
qualche cucchiaio di succo di limone. 

Procedimento: 
Lavate le fragole, tagliatele a pezzetti e passatele in un frullatore con 4 cucchiai di zucchero e il limone. Passate la purea al setaccio. Nel frattempo in un pentolino portate a bollore l'acqua con lo zucchero. Unite quindi i due composti e fate raffreddare. Una volta che il composto si è freddato trasferitelo in un contenitore di alluminio largo e capiente (agevolera l'operazione successiva) e mettete in freezer fino al congelamento. Una volta congelato tagliate il composto a pezzettoni e passate in un food processor o se avete un frullatore ad immersione adatto a tritare il ghiaccio potete effettuare questa operazione direttamente nella ciotola. Frullate fino ad avere una consistenza cremosa. Quando combinate lo sciroppo con la purea controllate di zucchero ed eventualmente aggiustate come preferite.

Lemon Granita without ice cream maker

Ingredients:
1 l lemon juice
1 kg sugar
2 l water

Procedure:
Put the water and sugar in a stainless steel bowl. Mix well to dissolve all the sugar. Add the lemon juice. Close the bowl with the lid and transfer it in the freezer until frozen - if  you do not have a bowl with a lid, you can use a steel pot. Once the mixture has frozen, work it with an immersion blender. Alternatively, with a knife cut the mixture in large chunks and transfer it in a food processor. Blend it until frothy. 
It can be served with a delicious Sicilian brioche (recipe here, in Italian)


Coffee granita without cream maker

Ingredients:
1/2 l water
250 ml of espresso coffee
100 g sugar

To serve: sweetened whipped cream to taste

Procedure:
In a saucepan bring the water to a boil with the sugar, stirring carefully to dissolve the sugar completely. Out of the fire, add the coffee. Allow to cool. Transfer it in a steel bowl with lid and place it in the freezer. When it is frozen (usually after 3 hours) mix it with an immersion blender or cut it into pieces and use the blender to make it fine and fluffy. 
Serve with whipped cream to taste.


Chocolate granita without ice cream maker

Ingredients:
500 ml water
180 g dark chocolate (75% of cocoa)
200 g sugar
80 g cocoa

Procedure:
In a saucepan bring the water and dissolve the sugar and cocoa. Put on the stove and bring to a boil. Remove from heat and add chocolate chunks and stir until completely dissolved. Transfer the mixture into a steel bowl with a lid. Allow to cool. Close the lid and put it in the freezer. When it is frozen (usually after 3 hours) break it with an immersion blender or cut it into pieces and use the blender to make it fine and fluffy. 
Serve with whipped cream to taste.


Strawberry granita without ice cream maker

Ingredients:
500 g of strawberries
150 g of sugar + 4 Tbs
300 ml of water
few Tbs of lemon juice

Procedure:
Wash the strawberries and cut them in small chunks. Purée them with 4 Tbs of sugar and add the lemon juice. Strain the purée. In the meantime combine water and sugar and bring to a boil. Mix the sugar and water syrup with the strawberries and let it cool. Adjust with more sugar if needed. Once cool transfer into a large pan and freeze it. Once frozen cut it in chunks and blend it in a food processor or immersion blender. Blend until you reach a creamy consistency.

Frittata verde di Alice Massa - Green omelette

Ognuno la chiama come vuole, frittata verde, frittata di erbette, o di erbe: si tratta di una tipica frittata piemontese, che si trova spesso nei buffet di antipasti delle trattorie come nei rinfreschi delle feste. È ottima sia calda che fredda, perfetta quindi per il lunch box ed è squisita nei panini, magari insieme a una fetta di pomodoro e un velo di maionese fatta in casa.
Originariamente si prepara con erbe di campo (in Piemonte i contadini nei mercati rionali vendono le “erbette da frittata”), ortiche, asparagi selvatici, erba di san pietro, tarassaco, cicoria: insomma tutte le “erbe povere” che da secoli affollano i campi e i giardini. Al giorno d’oggi e soprattutto all’estero è più difficile, e si rimedia con le verdure verdi: spinaci in primis, ma sono perfette tutte le verdure a foglia verde, meglio se un po’ amarognole (e per fortuna il Giappone ne è ricco). Indispensabili sono però i “gusti”, cioè le erbe aromatiche: basilico, prezzemolo, rosmarino, salvia, menta…

Ingredienti:
300 g circa di verdure a foglia verde o erbe di campo (io ho usato spinaci e altre verdure verdi)
erbe aromatiche a piacere (io ho usato basilico, prezzemolo, menta e rosmarino)
4 uova
parmigiano grattugiato a piacere
pan pesto
sale, pepe

Preparazione:
Tritare finemente le verdure e le erbe aromatiche. Io uso il robot da cucina aggiungendo anche un uovo in modo che le foglie non rimangano bloccate nella parte superiore del mixer a causa della loro leggerezza. Amalgamare il trito di verdure alle uova, aggiungere parmigiano, sale e pepe e tanto pan pesto quanto è necessario per addensare un po’ il composto. 
Cuocere in padella come una normale frittata, senza coprire e girandola a metà cottura, oppure in forno in una teglia con carta da forno a 200 gradi per venti minuti.




Green omelette 
Ingredients:
300 g green leafy vegetables (spinach or any other, better if a little bitter tasting)
aromatic herbs to taste (basil, rosemary, parsley, sage, mint etc)
4 eggs
grated parmesan cheese
breadcrumbs
salt, pepper

Method:
Chop the vegetables and the herbs very finely (you may want to use a food processor), add the eggs, salt, pepper, grated parmesan cheese and as much breadcrumbs as needed to make the mixture slightly firm but not too thick. 
Cook in a frying pan like an omelette - without covering it, and flipping it once - or bake it in the oven, on a parchement paper lined pie plate, at 200°C for twenty minutes.

Try this frittata in sandwiches with tomato and mayonnaise!

Polentina o torta povera di Silvia Cossich Goodman

Ingredienti:

10 cucchiai pieni di farina  – (un terzo della farina può essere sostituita ad esempio con farina di mandorle)
10 cucchiai di zucchero
10 cucchiai di latte
10 cucchiai di olio di semi
2 uova
Una bustina di lievito Pane degli Angeli (oppure un cucchiaino di “baking powder”)
Un pizzico di sale

Facilissimo da fare, buttate tutto nella planetaria e via! 
Infornate a 350°F (180°C) per circa 40 minuti.

Questa è la ricetta base per una tortina semplice semplice. Ci si può sbizzarire e aggiungere cioccolato a pezzetti, uvetta e frutta secca oppure una mela fatta a pezzetti (ammorbidisce molto).
Io faccio due dosi di impasto, in una aggiungo vaniglia, nell'altra cioccolato sciolto a bagno maria. I due impasti, uno bianco e uno nero, alternati in uno stampo permettono di ottenere un effetto di marmorizzazione molto carino.
Ho usato questa base tagliata a fette orizzontali, farcita di crema pasticcera, imbottita di caffè o liquore e coperta di panna. 
Insomma, è una ricetta base che non tradisce mai!


Ingredients:

1 cup and 1/3  flour  (you can substitute some of the flour with almond flour or G.F. flour)
1 cup sugar
½ cup milk
½ cup vegetable oil (sunflower or other)
2 eggs
pinch of salt
1 teaspoon baking powder

Super easy: throw the ingredients in a mix and pour!
Bake at 350° (180°) for about 40 minutes.

The above ingredients are for a basic cake. From this recipe you can add as you please, chocolate chips, dry fruit, raisin or an apple cut in small pieces (the apple will add moisture).
Another alternative is to make two batters, keep one as it is, add melted chocolate to the second and than pour in the baking container alternating to achieve a marbled effect. 


This cake can be cut horizontally and garnished with pastry cream, coffee or liquor and covered in whipped cream.

Rolls alla ricotta e arancia, con ripieno al cocco tostato e arancia, glassati al mascarpone e Grand Marnier di Rosa Mariotti

Per 12 rolls

Lievito:
8 g di lievito secco
60 ml di acqua tiepida
25 g di zucchero

Impasto:
375 g di farina
2 uova sbattute
25 g zucchero
120 g di sour cream o ricotta
85 g di burro non salato e sciolto, più dell'altro da spennellare sull' impasto
5 g di sale

Ripieno:
190 g di zucchero
100 g di cocco grattuggiato e leggermente tostato
La scorza di un'arancia grattugiata.

Glassatura:
120 g sour cream o mascarpone
190 g di zucchero a velo
30 ml di Grand Marnier
56 g di burro

In una ciotola attivare il lievito con i 25 g di zucchero e i 60 ml d'acqua. Quando inizia a formare la schiuma mettere nella ciotola della planetaria ed aggiungere tutti gli ingredienti dell'impasto. Lasciare impastare per 10 minuti, fino a che l'impasto non si stacca dalle pareti. Lasciare riposare fino al raddoppio. Intanto unire tutti gli ingredienti del ripieno e mettere da parte. Quando la pasta e' lievitata, stenderla formando un grande rettangolo. Spalmarlo con il burro fuso oppure con olio di cocco fuso, avendo cura di arrivare fino in fondo agli angoli laterali ma non completamente al bordo superiore, altrimenti una volta arrotolato i bordi non si sigilleranno. Con il bordo più lungo del rettangolo davanti a voi, cospargere il ripieno sulla superficie, riservandone circa un quarto per la decorazione finale, e pressare leggermente con le mani. Arrotolare il rettangolo a formare una sorta di un salame allontanandolo da voi e facendo attenzione che sia molto stretto. Pizzicare il bordo di chiusura. Tagliarlo a metà, ogni metà a metà ed ogni metà in 3 parti. Otterrete 12 rolls. Metterli in una teglia imburrata e lasciarli lievitare per circa 40 minuti al riparo da correnti d'aria. Cuocere in forno pre-riscaldato a 180ºC (350ºF) per circa 30 minuti o finchè dorati.
Pochi minuti prima di toglierli dal forno preparare la glassatura: cuocete 120 g di sour cream o mascarpone con 190 g di zucchero a velo,  30 ml di liquore e  56 g di burro.
Appena caldo e sciropposo versatelo sui rolls ancora caldi di forno.
Cospargete il cocco messo da parte e.... Buon appetito!


Ricotta and orange rolls, filled with touted coconut and orange and topped with mascarpone and Grand Marnier icing (English)

For 12 rolls

Yeast:
1 Tbs of active dry yeast
1/4 cup of warm water
2 Tbs of sugar

Dough:
2 eggs, lightly beaten
2 Tbs of sugar
1/2 cup of sour cream or ricotta
6 Tbs of melted unsalted butter plus extra for brushing the dough
1 tsp of salt
3 cups of flour

Filling:
3/4 cup sugar
1 cup of lightly toasted shredded coconut
Peel of one orange

Topping:
1/2 cup of sour cream or mascarpone with
3/4 cup of powder sugar
2Tbs of Grand Marnier
1/4 cup of butter

In a bowl activate the yeast with 2 Tbs of sugar and 1/4 cup of water. When it starts to foam transfer to the mixer bowl and add all the dough ingredients letting it go for 10 minutes until the dough comes away from the sides of the bowl. Let rest until doubled in volume. In the meantime mix together all the ingredients for the filling and set aside. When the dough is ready, roll it in a rectangle. Spread with some melted butter, or melted coconut oil, without going over the top border or it won't seal. With the longer side towards you spread the filling over the butter, reserving about 1/4 for the final decoration, and press gently. Start rolling the dough away from you, pinching to seal the final edge. Cut in half, the in half again and each piece in three pieces. You will have 12 rolls. Put the rolls in a butter pan e let rise for about 40 minutes. Bake in a pre-heated oven at 180ºC (350ºF) for about 30 minutes. While they cook prepare the topping: cook 1/2 cup of sour cream or mascarpone with 3/4 cup of powder sugar 2Tbs of liquor and 1/4 cup of butter.
Pour over the hot rolls and sprinkle with the reserved coconut.

Spaghetti alla checca di Deborah del Fovo - Spaghetti with Fresh Tomatoes, Mozzarella and Basil infused Olive Oil

450 g di pomodori ciliegina o 2-3 pomodori da insalata
120 ml di olio extravergine d'oliva
2 manciate di foglie di basilico fresco, più qualcuna per guarnire
230 g di mozzarella fresca tagliata a cubetti
Sale
Pepe

Pulire le foglie di basilico con uno strofinaccio umido. Tagliarle a julienne o spezzarle con le mani. Mettere il basilico in una ciotola e condire con l'olio d'oliva. Far riposare per mezz'ora

Lavare i pomodori e tagliarli a metà, togliere i semi e tagliarli ancora a metà. Se si usano pomodori più grandi tagliarli in quarti, togliere i semi e tagliarli a cubetti. Condirli con il sale e lasciarli scolare dalla loro acqua. Dopo 10 minuti aggiungerli al basilico.

Aggiungere la mozzarella al basilico aggiustando di sale e pepe.

Cuocere la pasta al dente e condire con gli ingredienti preparati in precedenza, aggiungendo olio se necessario. Trasferire in un piatto da portata e guarnire con foglie di basilico fresco.




Spaghetti with fresh tomatoes, mozzarella and basil infused olive oil (English)


1 pound/453g spaghetti (short pasta like penne can be substituted)
1 pound/453g cherry tomatoes or 2 to 3 ripe salad tomatoes
½ cup/120ml extra virgin olive oil, plus more if needed
2 handfuls fresh basil leaves, plus a sprig or two to garnish
8 ounces/226g fresh whole milk mozzarella (2 large balls mozzarella)
Kosher or sea salt
Freshly ground black pepper

Clean the basil leaves by gently wiping with a barely damp paper towel. Chop or tear the basil into small pieces or cut into thin julienne ribbons. Place the basil in a large glass or earthenware bowl, add the extra virgin olive oil and stir once. Set aside for ½ hour or more to infuse the oil with basil flavor.

Wash the cherry tomatoes and cut in half then gently squeeze out seeds and cut each piece in half again. If using larger tomatoes, cut into quarters then remove seeds and core then cut flesh into small dice. Sprinkle the tomatoes with salt and place in a mesh strainer set over a bowl to drain excess liquid. After draining for 10 minutes, add the tomatoes to the basil oil in the bowl.

Chop the mozzarella into small dice about the size of the tomatoes. Add to bowl with the other ingredients. Season lightly with salt and pepper and toss together. Taste and correct seasoning if needed. Set aside.

Bring 5 quarts of water to a vigorous boil then season the water with a generous handful of kosher salt. When the water returns to a boil, add all the spaghetti and stir once to prevent the pasta strands from sticking together. Cook the spaghetti until “al dente” or tender yet firm to the bite (usually two minutes less than package directions).

Drain the spaghetti and add to the ingredients in the bowl. Toss the spaghetti in the bowl until evenly coated with oil and the condiments are well distributed, drizzling with more olive oil if needed. Transfer the spaghetti to a large serving platter or individual plates and garnish with sprigs of fresh basil. Enjoy immediately.

Ciambellone di Stefania Olivieri - Bun shaped breakfast cake

Quando si lascia il proprio paese ci sono tante maniere per portare con sé le persone amiche, per esempio una ricetta. Ogni volta che preparo questo ciambellone mi pare di sentire la voce della Ross, la segretaria di redazione del giornale in cui ho lavoravo a Bologna. Esse arrotolata, alla bolognese, sorriso sempre pronto: questo è il suo ciambellone. Morbidissimo, delicato, perfetto per colazione, merenda e dopo cena: una delizia. Anzi, una delisia!

Ingredienti:
3 uova
300 g di farina
200 g di zucchero
250 ml di panna
1 bustina di lievito italiano (oppure due cucchiaini di baking powder, ma non è la stessa cosa).

Procedimento:
Lavorate i rossi con lo zucchero fino a renderli spumosi. Incorporate farina, panna e lievito. Impastate bene usando la planetaria. All'impasto aggiungete i tre albumi montati a neve con un pizzico di sale mescolando con un cucchiaio di legno dal basso verso l'alto. Imburrate uno stampo con il buco e cospargetelo di farina. Versate l'impasto nello stampo e infornate a 360°F (180°C) per 35-40 minuti. Fate la prova dello stecchino: quando è pronto potete lasciarlo così o guarnirlo con zucchero a velo. Per un effetto goloso e bello, riempite il centro con crema di mascarpone e adagiate sopra dei frutti rossi.



Bun shaped breakfast cake

Ingredients:
3 eggs
300 g flour
200 g sugar
250 ml cream
16 g baking powder

Procedure:
Beat the yolks with the sugar until frothy. Stir in flour, baking powder and cream. Mix well using a mixer. Beat the egg whites with a pinch of salt and then add them to the mix, stirring with a wooden spoon from the bottom up. Butter a mold with the hole and sprinkle with flour. Pour the mixture into the mold and bake at 360 ° F (180 ° C) for 35-40 minutes. Do the toothpick test: when it is ready, you can leave it or garnish with powdered sugar. 
For a delicious and beautiful effect, fill the center with mascarpone cream and arrange on top of red fruits.

Polpette di tofu e ceci di Beatrice Meredo - Tofu and chickpeas meatballs

425 g di firm tofu
Un barattolo di ceci
3 cucchiai di cilantro o prezzemolo
Peperoncino a piacere
2 spicchi d'aglio
1 scalogno tritato
2 cucchiai di farina
Pan grattato
Sale
Pepe
Succo di limone

Mettere nel robot da cucina il tofu, i ceci, il cilantro (o prezzemolo), il peperoncino, l''aglio, lo scalogno tritato, sale, pepe e succo di limone. Fare frullare il tutto e poi trasferire in una ciotola. Aggiungere la farina e formare delle polpettone. Passarle nel pangrattato e friggerle leggermente (non han bisogno di cuocere di fatto) in olio leggero (rice bran, grapeseed, arachidi…). Si possono servire come un hamburger, con lattuga, cetrioli, cipolla e magari una salina alla soia (soia, lime, olio di sesamo, zucchero, scalogno, chili flakes).



Tofu and chickpeas meatballs (English)

15 oz of firm tofu
A can of chickpeas
3 tbs of cilantro or parsley


Red pepper flakes (optional)
2 garlic cloves
1 green onion chopped
2 tbs of flour
Breadcrumbs
Salt
Pepper
Lemon juice

In a food processor blend the tofu, chickpeas, cilantro (or parsley), red pepper flakes,  garlic, green onion, salt, pepper and lemon juice. When well blended place in a bowl and add the flour. Shape the meatballs and roll them in the breadcrumb. Fry them in light oil as rice bran, grape seed or peanut. It can be served as a hamburger with lettuce, tomato, pickles and a nice soy sauce.

Tofu saltato di Beatrice Meredo - Sautéed tofu

500 g di tofu extra firm


Per la salsa:
2 cucchiai di salsa di soia
1 cucchiaio di olio di oliva
1 cucchiaino di olio di sesamo
1 cucchiaino di miele o sciroppo d'acero
2 cucchiaini di aceto di riso
1 cucchiaino di zenzero grattugiato
2 cucchiaini di salsa hoisin (facoltativo)
aglio (facoltativo)

Far scolare e asciugare bene il tofu, avvolgendolo più volte in strofinacci. Tagliare il tofu a cubetti, farlo marinare nella salsa per 20 min circa e poi farlo saltare in una padella antiaderente con un po di olio (arachidi) e dell aglio tritato fino (a piacere) finche non diventa bello "rosolato". Volendo lo si può servire con del cippollotto.




Sauteed tofu (English)

16 oz of extra-firm tofu


For the marinade:

2 tbs of soy sauce
1 tbs of olive oil
1 tsp of sesame oil
1 tsp of honey or maple syrup
2 tsp of rice vinegar
1 tsp of grated ginger
2 tsp of hoisin sauce (optional)
garlic (optional)

Drain and dry the tofu completely, wrapping it in kitchen towels to absorb the extra water. Cut the tofu in little cubes, and marinate it in the sauce for 20 minutes. Sauté the tofu in a non stick frying pan with some peanut oil, and garlic (optional) until golden brown. Can be served with sliced green onions.

Ciambella di riso al forno ripiena di mozzarella di Elisabetta Ruggeri - Mozzarella filled rice ring

(Washington)

300 g di riso Arborio.
350 g di ragù
750 ml di brodo
40 g di burro
3 uova
100 g di parmigiano
300 g di mozzarella
Noce moscata
Sale

Mettere il riso in tegame insieme al ragù e cuocere a fuoco medio aggiungendo il brodo piano piano finchè il riso è cotto. Condire il risotto con il burro, il parmigiano, le uova e un po’ di noce moscata. Aggiustare di sale. Deve essere un bel risotto saporito. Far raffreddare per una quindicina di minuti. Imburrare uno stampo a ciambella liscio e cospargetevi sopra del pangrattato. Mettete metà riso, poi abbondante mozzarella tagliata a cubetti, e ricoprite con il restante riso. Spruzzare la superficie con olio extra vergine e un po’ di pangrattato e mettere al forno per 15 /20 minuti a 380° F/190°C. Sfornare, far raffreddare, capovolgere e voilà. Usando una teglia rettangolare o quadrata si può tagliare a cubi come una lasagna prima di servirlo.


Mozzarella filled rice ring (English)

1 1/2 cups of uncooked Arborio rice
1 1/2 cups of ragù sauce
25 oz of stock
3 tsp of butter
3 eggs
1/2 cup of grated parmigiano
3 cups of mozzarella cheese, shredded
Nutmeg
Salt

In a saucepan combine rice and ragù, cook uncovered on medium adding the stock as if making a risotto until the rice is cooked. Once cooked and slightly cooled add the butter, parmigiano, eggs, nutmeg and salt. Butter a savarin mold and sprinkle it with breadcrumbs. Pour half of the rice, fill with mozzarella cheese, top with the remaining rice. Drizzle with olive oil and more breadcrumbs. Bake at 380° F for 15-20 min. Let cool, invert the mold and serve.

Cheesakopita di Rosa Mariotti

Ingredienti:
8 fogli di pasta phyllo
3 uova separate
250 g di mascarpone
350 g di formaggio tipo philadelphia
180 g di zucchero
Burro
1 cucchiaino di vaniglia
Scorza di limone

Esecuzione:
Imburrare una teglia a cerniera del diametro di  18cm/8 pollici. Fare quattro strati di pasta phyllo imburrando ogni foglio. Preparare l'impasto sbattendo i rossi a spuma con lo zucchero, unire la vaniglia e la scorza grattugiata. A seguire i due formaggi molli. Unire gli albumi montati a neve. Versare il tutto nella teglia foderata di pasta phyllo. Ripiegare i lembi della phyllo usata sul fondo ed adagiarli sul composto. Imburrare un foglio di phyllo ed adagiarlo sulla torta, ripetere con 3 altri fogli. Rincalzarli nei lati della torta tagliando l'eccesso se necessario. Cuocere a 350° F / 180°C per circa 1 ora o finchè dorata. Lasciare raffreddare a temperatura ambiente prima di servire . Può raffreddare anche in frigo .





Cheesakopita (English)

Ingredients:
8 sheets of phyllo dough
3 eggs separated
250 g of mascarpone
350 g of cream cheese
180 g of sugar
Butter
1tsp of vanilla
Lemon zest

Directions:
Butter an 8" springform round pan. Start by layering 4 sheets of phyllo dough buttering each one. Beat the egg yolks and sugar until light and fluffy. Incorporate the mascarpone, cream cheese and lemon zest. Beat the egg whites with a pinch of salt until they are stiff. Incorporate the egg whites into the egg-cheese mixture. Pour the filling into the prepared pan. Layer 4 more sheets of phyllo dough on top of the filling buttering each one. Cut the excess dough or fold it over. Bake at 350° F for 1 hour. Let cool completely before slicing.
